I’ve been on a crazy health kick lately. Trying to workout at least 4 times a week and eating really clean. It is a process so of course I’ve had cheat days and lazy days but I’ve been feeling stronger, slowly losing weight and feeling healthier over all :)
I’ve been getting a lot of my inspiration from a number of girls on Instagram. They post awesome workouts and recipes.
One that I recently found by this lovely lady was a fruit dip that is so easy to make and tastes amazing!!

Greek Yogurt and Peanut Butter…. That’s it!!
I used Peanut Butter and Co. Bees Knees but you can you whatever you’d like. I am going to try Almond Butter next time.
This mixture was so good I was eating it straight from the bowl once I ran out of strawberries. I had to put it away asap so I wouldn’t eat the whole thing!

One of my favorite desserts are any kind of fruit crumbles. A while ago I joined a co-op, Annie’s Organic Buying Club. I pick up my share every other week. For the past, I don’t know, 5 million weeks I’ve been getting apples and more apples and more… Lets just say I eat and average of 2 apples a day for my glowing green smoothie and I still have a lot of apples left over! Haha
One week I also got a lil pumpkin in my share so I decided to make a pumpkin apple crumble. It was pretty tasty
Pumpkin and Apple Crumble recipe:
1 mini pumpkin, cubed
4 apples, chopped
2 tsp. butter
1/3 cup sugar
1 tsp. ground cinnamon
1/4 tsp. pumpkin pie spice
Crumble Topping Ingredients:
1/4 cup whole wheat flour
1/4 cup almond meal
1 cup rolled oats
1/2 cup brown sugar
3-4 T butter (put butter in the freezer when you start the recipe)
Instructions: Preheat oven to 400F. Cut pumpkin into same-size cubes about 1/2 inch square. Melt 2 tsp. butter in large non-stick frying pan and start to saute pumpkin over low heat while you cut up apples. As you peel and cut apple into small pieces add it to frying pan, then add sugar, cinnamon and apple pie spice. Cook the mixture until pumpkin is fairly soft, about 10 minutes.
